Winter Leek and Potato Soup

Steps

INGREDIENTS
2 leeks
6 medium to large potatoes, cubed
1 cup half-and-half
2 to 3 tablespoons butter
1/2 cup onions, chopped
I quart chicken broth
1 teaspoon powdered garlic
Salt and pepper to taste
1 tablespoon parsley flakes
(fresh preferable)
4 ounces cheddar cheese, shredded
(optional)
DIRECTIONS
Clean and chop leeks.
Heat butter. Add leeks and onion, and
cook until tender.
Add cubed potatoes and broth, and cook
until tender. Add half-and-half, and simmer 15 minutes.
Add seasonings, and adjust if necessary. Add parsley flakes
and cheddar cheese if desired. Stir and serve.
